1 pkg Fresh Baby Spinach leaves chopped

10 oz pkg frozen chopped spinach, thawed and drained
1/4 onion minced
1 clove garlic pressed or finely minced
1 cup ricotta or creamed cottage cheese
1/2 cup shredded cheese - Cheddar, Jack, or Mozzarella
3 eggs, slightly beaten
2 TBS flour
1/4 cup butter, melted
1/4 tsp pepper
Preheat oven to 350 degrees.
Lightly oil or spray a 1-1/2 quart casserole.
Combine all ingredients and mix well.
Pour into prepared casserole dish.
Bake for 50 to 60 minutes.
Optional: Recommend using ricotta and mozzarella cheeses. After oiling baking dish sprinkle bread crumbs to just cover the bottom, pour in the casserole, layer thin slices of tomato on top and sprinkle top with more bread crumbs and 1 tsp grated parmesan, romano, or asiago cheese, and bake as above.
Serves 2-3 as main dish, 4-6 as a side.
